No-Bake Strawberry Pie

This is a simple and delicious dessert that brings the natural flavor and beauty of strawberries to the table. Perfect with a dollop of whipped cream or vanilla ice cream on a warm Summer evening.

You don't need any special baking skills for this pie, but if you are a pastry expert, by all means skip the store-bought crust and do your thing!

Note that if you want to replace a few ingredients with low-fat or sugar-free ingredients this has a natural sweetness that make it work for replacements.

You will need:

1 Cup Sugar
1 Cup Cold Water
1 Tablespoon Butter
3 Tablespoons Corn Starch
1 Tablespoon Lemon Juice
1 teaspoon Red Food Coloring (optional...brightens the color)
Pinch of salt
3-4 Cups Strawberries, 1/2 sliced or quartered and 1/2 mashed
Your favorite Pie Crust -- I use a store bought Graham Cracker Crust)

Place the sliced or quartered berries into your pie crust (follow instructions on the crust and if necessary, bake the crust prior to adding the berries).

In a sauce pan on the stove over medium heat, mix the mashed berries and sugar and bring to a boil, being sure to stir continuously.

Place the water into a small bowl and whisk in the cornstarch thoroughly.

Slowly stir the cornstarch mixture into the strawberry mixture on the stove, and then lower the heat.

Continue stirring the mixture over low heat for about ten minutes while it thickens.

Remove mixture from heat, and pour it over the strawberries in the bottom of the crust.

Chill for 2-3 hours (or overnight).

Serve with a dollop of your favorite whipped topping.

This recipe works well with other berries too. Mix it up!
