The kids are out of school, your bathing suit found its way to the top of the drawer, and you can barely control your urge to flag down the ice cream truck every time it drives by. That can only mean one thing — summer's here.
You thought barbecues were just for lunch and dinner, but boy, were you mistaken. Enjoy your first breakfast barbecue this summer with some grilled French toast. It's just as simple as cooking it indoors, but it's better because you get to enjoy a beautiful summer morning and make your friends jealous that they didn't think of it first. Preheat your grill to medium and prepare your French toast as you normally would. Oil the grill and cook each slice for 3-4 minutes per side, until browned.
You might have come across grilled peaches or pineapple, but that's likely the extent of your grilled fruit knowledge. There are so many possibilities; apples, berries and watermelon are just a few. Grill them for just a few minutes on each side, or until cooked to your liking, and serve with your French toast for a well-rounded barbecue breakfast.
That's right, an entire pizza. On the grill. The beauty of this grilled dish is that there are endless toppings to choose from, so you'll never get bored. Brush one side of your pizza dough with olive oil and place the oiled side down on the grill over direct high heat, then brush the top of the dough too. Let it cook for about 3 minutes, flip it over, and put on your toppings. Cook it, covered, for 3-5 minutes.
If you want all the cheesy goodness sans carbs, try grilling a wheel of cheese. For a smooth and velvety dip that can be enjoyed as an appetizer or snack, go for something like brie. Brush each side with olive oil and grill covered on low heat for about 10 minutes, until the rind is soft. Grill it alongside some fruit or vegetables to avoid any judgment for eating straight cheese. Not that we would judge you.
It is called a grilled cheese for a reason, so do yourself a favor and make it on the grill. Prepare it as you would if you were cooking it in a pan and grill it on medium heat. Make sure to keep an eye on it and move it around if necessary, because hot spots can cause the sandwich to cook faster in some places than in others. Once the first side is golden brown, flip it over and cook until the second side is browned as well.

Leafy herbs, like mint or basil, will burn up right away. However, grilling woody herbs, like rosemary or thyme, brings out their flavors in an interesting way. Grill whole sprigs of herbs on medium-high heat and add them to marinades and even cocktails.
Okay, so sometimes you are in the mood for hot dogs and hamburgers. And what's a burger without a side of fries? If you have a fryer, you know what a hassle it can be, so skip the mess. Cut your fries thin, so that they can cook thoroughly on the grill. Wash them in cold water and drain before adding them to a well-seasoned grill-safe pan. Cook them on high heat for about 30 minutes, flipping them and scraping the bottom every once in a while to prevent them from sticking to the pan.
Every barbecue needs a proper dessert, and no dessert is more summery than s'mores. Try something a little different with these banana boat s'mores. Cut a line along the inside curve of a banana so that it resembles a boat. Stuff it with marshmallows, chocolate chips, and nuts and wrap it in aluminum foil. Cook, covered, on medium heat for about 10 minutes, until the marshmallows soften.
