I had this grand vision in my head of the first time someone ate dinner at my new apartment: an epic dinner party with all my friends crammed into the teeny space once everything was perfect. No more boxes, no more clutter, everything in its place, I would have created this delicious amazing meal in my teeny studio apartment kitchen and everyone would be impressed. I would Instagram both the dinner and the party and get a bunch of likes.
Of course, that’s not actually how it happened.
Nearly two weeks after coming back from vacation, I’m not even close to unpacked. There are still boxes lining every wall and my closet is a wreck. But a few nights ago, a dear friend came over to help me set up my new couch, pretty late at night, and I was heating up some leftovers for my own dinner. She said she hadn’t eaten yet, so I heated some up for her too, and we ate on the floor next to my bed before tackling the couch project. It wasn’t until the morning after when I realized that was my first “dinner party,” in the new apartment, as it were. I didn’t even take a picture! And it felt so much more soul-affirming than any staged, perfectly perfect party could have.
Don’t get me wrong, I love Instagram and dinner parties as much as the next girl, but for me at least lately something has gotten lost in translation. Instead of capturing life’s little moments, I find caught up in the seemingly perfect world that social media sometimes creates. Throughout the whole breakup-moving-unpacking process I have found myself struggling to ask for help, something that usually comes easy to me, and I wondered why. I realized it’s because I don’t want people to see my mess. To see that my life definitely isn’t perfect. And I’m not sure what I’m afraid of because every single time I’ve opened my heart to a friend or family member they have responded kindly. But asking for help, being authentic, talking about difficult stuff makes you vulnerable and that’s scary. It’s a constant learning process and takes a lot of trust in yourself and the people around you.
This would usually be the part of the post where I would give you tips and tricks for being authentic in your own life but all I can say is that it’s a journey you have to take for yourself. For me, it’s a realization that I would rather let people in, be real, see my journey and hopefully inspire someone else in the process than try to be picture-perfect all the time (how anxiety-inducing is that?!). The picture-perfect is never real in any case, and isn’t life so much more fun with friends who see your mess and love you anyway?
I made this cod recipe over the weekend and the sauce is so good I’ve eaten leftovers over rice bowls and even used it as salad dressing. It definitely takes some time, but it’s mostly just waiting for the peppers to cool off. Eat it on your floor (different from OFF the floor!) or on a table, with friends or enjoy it alone. However, you decide, it’s delicious, real food for your real life.

2 green bell peppers
1 poblano pepper
1/2 white onion, sliced into wedges
1 garlic clove
1 1/2 cups + 2 tbsp. extra virgin olive oil
4 4 oz. cod filets
Preheat your oven to 450 degrees Fahrenheit.
Place the whole peppers and onion wedges on a baking sheet.
Salt well and roast, turning every 10 minutes until peppers collapse and are singed on at least half of their surfaces, 30 to 35 minutes.
Remove from the oven and set the onions aside.
Place the peppers in a bowl, cover tightly, and let sit for at least 20 minutes.
While the peppers are cooling, place the cod on a baking sheet and spread with 2 tbsp. olive oil.
Reduce the oven to 350 degrees and bake until the cod is flaky, about 20 minutes. Remove from the oven.
Turn back to the peppers - peel off the skins and use a spoon to scoop out the seeds. Reserve any juice that was released while they were cooling and try not to rinse the seeds off - this loses some of the smoky flavor.
Place peppers and onions, as well as the rest of the olive oil, in a food processor or blender and puree until smooth.
Serve cod filets covered with sauce!
