PREP: 5 minutes YIELDS: 1 cup + 2 tablespoons 1/2 cup (120g) tomato paste 1/2 cup (120g) water 1 tablespoon (20g) pure maple syrup 1 tablespoon (15g) dark balsamic vinegar 1 teaspoon (3g) garlic powder 1 teaspoon (2g) smoked paprika 1⁄/2 teaspoon (2g) ground chipotle chile pepper powder 1/2 teaspoon (3g) fine salt
Combine all of the ingredients in a small bowl, and whisk until completely smooth. Taste and add more chile pepper powder, if you’d like it spicier.

(I don’t recommend omitting completely.) You could also use half and half of each.
