2013 Food Trends

Food trends may take a surprising turn in the new year, according to journalist Julia Moskin in her New York Times article predicting 2013's popular dishes. Moskin points to dishes such as sunchokes (roots from the sunflower plant) seen in restaurants across the country, and soft-serve ice cream machines showing up in gourmet food trucks and eateries the nation over, with surprising flavors like salted pistachio caramel and guava horchata. The most unexpected (and perhaps most unpalatable) food trend is the possible rise of pig tail. Restaurants in Boston, Philadelphia and Los Angeles are currently carrying this rustic, gelatinous meat, all with their own take. One does a spit roast tail, another has created a Buffalo style tail.
