Cake Batter Cookies

Who doesn't love a good chocolate chip cookie? I know I do. Either homemade or store-bought, there's never a bad one, but I do have favorites. When I had extra cake mix, I wanted to try something else besides a cake or cake pops. I found the recipe for cake batter cookies and had to try these out. These cookies were exactly what I expected: delicious with a subtle cakey, vanilla taste. They are soft and fluffy, and the chocolate chips added a nice contrast to the mix. You can get crafty here and use any flavor cake mix you want. I used yellow, but whatever you have on hand will work.
 
Ingredients:
1 (18.25 oz.) box cake mix
1 tsp. baking powder
2 eggs
1/2 cup vegetable oil
1 cup semisweet chocolate chips
 

Step 1

Preheat oven to 350 degrees F (175 degrees C).

Step 2

In a medium bowl, stir together the cake mix and baking powder. Add eggs and oil, then mix until well blended.

Step 3

Stir in chocolate chips.

Step 4

Drop by rounded spoonfuls onto cookie sheets. Bake for 10 minutes in the preheated oven.

Step 5

Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
