Vegan Banana Nut Muffin Pancakes

There is nothing better than a banana nut muffin. Unless it's a banana nut pancake. Unless it's a banana nut pancake that tastes like a muffin because there's a streusel topping on each and every pancake. Anything with streusel topping and I'm in.

This recipe is not your normal pancake batter recipe. Completely vegan, it uses Earth Balance instead of butter, almond milk instead of dairy, whole wheat pastry flour, some flaxseed for crunch and raw nuts. There is no added sugar, except in the topping. It is remarkably good for you. And yet it tastes decadent, thanks to the sweetness of the banana and, I have to mention it again, the streusel topping. Try it instead of buying a muffin tomorrow, and I guarantee it will become part of your breakfast routine.
